Slimming World - Turmeric and Coriander Rice

Ingredients

Low-calories cooking spray
1 onion, finely chopped
1 tsp turmeric 
275g dried basmati rice
600ml vegetable stock
30g fresh coriander leaves and stalks, chopped

Method

1. Spray a pan with low- calorie cooking spray and place over a medium-high heat. Add the onion and fry for 1-2 minutes, then add the turmeric and rice and cook for a further 1-2 minutes, stirring to coat.

2. Stir in the stock and coriander and bring to the boil. Cover, reduce the heat to los and cook for 12-15 minutes, or until the rice is tender and the liquid is absorbed. Remove from the heat and leave to stand covered, for 10-12 minutes, then fluff up the rice with a fork.
